Pancakes with dates puree

When I was a kid I ask my mom to make us pancakes every week. Because we missed childhood, we all gathered and agreed to prepare some Orlando’s with dates puree and apples.

We know, we know, they are not classic childhood pancakes, but we wanted to make the American version, that is fluffy and soft pancakes. You can’t even believe how tasty they are along with this mashed potato, which in consistency looks more like a jam. Orlando’s dates are like caramels, sweet and you won’t stop eating them. Because we know how sweet they are, I didn’t add any sugar to the pancakes, just to balance the final taste.

Such a puree can be used as a sweetener for any other dessert that comes to mind: milk pudding, rice milk, it can be made into the composition of different cakes, cakes, muffins, checks or even eaten on a slice of bread.

It is very simple and fast, you just need a good blender, in which you put some peas and water to make the puree consistency. If I convinced you, here’s how you can make this recipe to conquer your loved ones!


For dates puree:
250 gr. Orlando’s Seedless Premium Dates Naturally Dried
~ 350 ml. water
2 apples

For pancakes:
250 gr. whole wheat flour
350 ml. milk
2 eggs
30 gr. 80% butter
1 tablespoon vanilla essence
1 sachet baking powder
1/2 teaspoon cinnamon
1 tip of salt powder


How do we make the pancakes?
Put the dry ingredients in a bowl: flour, baking powder, cinnamon, salt powder, and mix.
In another bowl put the wet ingredients: eggs, vanilla essence, melted butter and half the amount of milk.
Beat these ingredients well with a fork, add them over the dry ingredients, then mix the composition with a slurry.
While mixing, add the rest of the milk until a homogeneous composition results.

To know:

  1. The composition for American pancakes should be thicker than that of classic pancakes, but still be slightly liquid.
  2. As you have noticed, in the list of ingredients no sugar is passed, this is because we rely on the puree of the courmals, which is very sweet, so we do not have to add other sweeteners. If you are the type of person who prefers the sweetest desserts, you can add a little sugar to the composition.

Take from the composition of pancakes half large polonic or small polonic and add it to a greased pan with a little oil.

Fry the pancakes on one side until you see small bubbles appear on the surface, then you can turn them on the other side and fry for another 1 minute.

How do we make the dates puree?
While preparing the pancakes, place the dates in a bowl, cover them with warm water and leave them to hydrate.
After about 20-30 minutes, put the dates in a blender and gradually add the 300-350 ml. water, until you reach the desired consistency of the puree: more liquid or more solid.

After you have made the dates puree, cut 2 apples into cubes, place them in a pan with the puree and leave to simmer for about 3-5 minutes, until the apple cubes have softened a bit. Stir from time to time.

How to serve the pancakes?
Put some pancakes on a plate, then add some dates puree over them.
