When I was a kid I ask my mom to make us pancakes every week. Because we missed childhood, we all gathered and agreed to prepare some Orlando’s with dates puree and apples.
We know, we know, they are not classic childhood pancakes, but we wanted to make the American version, that is fluffy and soft pancakes. You can’t even believe how tasty they are along with this mashed potato, which in consistency looks more like a jam. Orlando’s dates are like caramels, sweet and you won’t stop eating them. Because we know how sweet they are, I didn’t add any sugar to the pancakes, just to balance the final taste.
Such a puree can be used as a sweetener for any other dessert that comes to mind: milk pudding, rice milk, it can be made into the composition of different cakes, cakes, muffins, checks or even eaten on a slice of bread.
