Organic walnut hummus and green salsa with pumpkin seeds

Hummus has its origins in the Middle East. Over time, this recipe has been reinterpreted in thousands of ways and I said not to miss this opportunity, so we show you our version: hummus with walnut kernels and green salsa with pumpkin seeds and telemea.

Full of nutrients and vitamins, this hummus is rich in protein, carbohydrates and healthy fats from walnuts, pumpkin seeds and telemea. A complex preparation in all three macronutrients beneficial to the body.

It can be an aperitif on any occasion (festive meals, holidays, birthdays), a snack or even a main meal, because it is extremely filling. This hummus can be enjoyed with some slices of fresh bread or crackers, over which you can add a fresh green salsa, like the one we made. It can also be put in a small saucepan and packed wherever you go.

Ingredients

250 gr. Orlando’s chickpeas
50 gr. Orlando’s BIO walnut kernel
2 tablespoons peeled pumpkin seeds Orlando’s
1 small cucumber
1 handful of fresh parsley leaves
30 gr. cheese
lemon juice
1 clove of garlic
To taste: salt, pepper, ground cumin

Preparation

Put 50 gr. walnut kernels in a small bowl with lukewarm water and leave to hydrate for at least 2 hours. The walnut kernel will become softer and easier to mix in the food processor.

Squeeze the canned chickpeas, but keep some of the canned liquid in a small glass.

Add in a food processor the squeezed chickpeas, the hydrated walnut kernel, the garlic clove, the lemon juice, the spices to taste and 3-4 tablespoons of the liquid in which the chickpeas were. Blend them until a fine paste results. If necessary, add a little more of the preserved liquid to reach the desired creaminess.

Make green salsa.
Put the chopped parsley, washed cucumbers, peeled and diced, pumpkin seeds, diced telemeau, salt and pepper to taste in a bowl. Mix them with a spoon. Optionally you can also add a tablespoon of olive oil.

Add the hummus to a bowl and place 1-2 tablespoons of freshly made green salsa on top. Serve the hummus with slices of bread, crackers or on sticks. Great appetite!
