Chia pudding with pomegranate and apricot puree

Chia pudding with pomegranate and apricot mash is the ideal dessert for hot summer days. It is a delicious recipe, which you will fall in love with from the first teaspoon.

Why do we like this pudding so much? The method of preparation is extremely simple, it is made quickly and does not require baking, it is a healthy and healthy dessert due to chia seeds which contain a lot of fiber and are rich in healthy fats and most importantly, we managed to make a very tasty puree from Orlando’s dried apricots, which went great with pudding and pomegranate seeds.

This pudding is the kind of dessert that can be eaten either for breakfast, as a snack or as an innocent dessert. It can also be packaged at work or at a picnic if you put it in a jar or small saucepan.

From the pile of apricots used by us came quite a large amount of puree, but it can be used in other desserts. A large portion of pancakes is the next recipe on our list where we want to use this puree of dried apricots, but until then we show you how to prepare this pudding.

Ingredients

250 gr. Orlando’s dried apricots
100 gr. Chia seeds
300 ml. milk (maybe cow or vegan: almonds, coconut)
berries from 1 pomegranate
1 tablespoon honey

Preparation

Put the dried apricots in a bowl and add warm water over them to cover. Leave them to hydrate for at least 30 minutes. Why is this step needed? We will make a apricot puree, and by hydration they will be much easier to blend.

After the apricots have been moisturized, strain them from the water they have been in, but do not throw the water because you will need it to make the puree.

Mix apricots with a vertical blender (by hand) or with a kitchen robot, adding little by little water, until a creamy mash results.

How do we make chia pudding?
In a large bowl put the chia seeds and half of the milk. Mix with a tablespoon for 2-3 minutes until you notice that the seeds are starting to swell.

Also add the rest of the milk, plus 1 tablespoon of honey or bees, you can add extra honey. Stir again for 2-3 minutes, then put the bowl in the refrigerator for about 30 minutes.

Now is the time to mount the pudding in a large glass or bowl. At the base of the glass add 3 tablespoons of chia pudding, over these put 2 tablespoons of pomegranate berries, again 2 tablespoons of chia pudding, and over 2-3 tablespoons of dried apricot puree.

The rest of the remaining apricot puree, put in a jar or container and store in the refrigerator. You can use it for different toasts, as jam for pancakes, you can put it in the composition of a cake topper, cake or why not, eat it directly from the jar, with the spoon. It’s delicious!

Garnish the chia pudding with pomegranate and fresh mint. Put the pudding in the fridge, cold, until you decide to eat it. Serve with pleasure!
