Cake with grounded almonds, poppy seeds and lemon

The cake with grounded almonds, poppy, and lemon is very aerated, with a subtle sour taste and an interesting texture due to poppy seeds. It is ideal for any occasion, whether a birthday or holiday or you can prepare it whenever you feel you need a quick and tasty dessert.

Besides the fact that it is made quickly, it is also very easy to prepare, and for this cake, you do not need extremely many ingredients. We replaced wheat flour with a grounded almond from the Maestro range. The grounded almonds are suitable for people who want to reduce their carbohydrates, who have a gluten intolerance or for those who follow a healthy lifestyle.

The cakes always send us thinking at home, so we wanted to bring a splash of that magic to use in the kitchen. The smell of the cake spread throughout the house as it stood in the oven and I just waited to taste it.

Ingredients

200 gr. Orlando’s Maestro grounded almonds
6 eggs
100 gr. sugar
2 tablespoons mac
1 tablespoon vanilla essence
1 tip of salt
10 gr. baking powder
½ teaspoon cinnamon
2 lemons
Cream:
250 gr. cheese cream
3 tablespoons honey bees
3 tablespoons natural yogurt

Preparation

The cream I chose is one of the fastest and it worked great. I kept the decor simple and added a “rain” of lemon peel on top.

Divide the egg yolks into two different bowls. Beat egg whites with a pinch of salt with the aid of a mixer, until an egg foam results. This step should take about 5 minutes. First, set the mixer to medium speed (2-3), then gradually to high speed (4-5).

In the bowl with the egg yolks add the essence of vanilla, sugar, peel from a lemon and juice from half a lemon. Mix everything well with a saucepan, then add this mixture over the egg whites beaten with foam.

Using a spatula, it incorporates the yellows with circular movements from top to bottom. Do not insist very much on keeping the composition as airy as possible.

The next step is to add the two tablespoons of poppy, ½ teaspoon of cinnamon and half of the amount of Maestro ground almonds. Also with the help of a silicone spatula or a wooden spoon, it incorporates dry ingredients with circular movements from top to bottom. Then add the remaining ground almonds and repeat.

Pour the composition into a tray covered with baking sheet and grease with a little olive oil, then place the tray in the preheated oven at 180 ° C for 30 minutes. Once baked, remove the pan and allow the cake to cool completely, then add the cream over it.

How do we make cream?
250 gr. cream cheese, 3 tablespoons of natural yogurt, peeled ½ lemon and ½ lemon juice, add to a bowl and mix well with a drizzle.

After the cake has cooled, cut the edges of it, then add the cream on top. We level it beautifully with the help of a knife, then shave it over a little lemon peel.

Cut into pieces and serve with love!
